Today, I am posting five recipes for dinner that I use over and over and over again! We need some change! My sister gave me this idea to blog some recipes, encourage others to blog recipes as well, and then we will all be able to try some new dinner menus! Yay! Here are my five:
Mimi’s Café Corn Chowder
4 Tbsp Butter
6 Tbsp Onion, chopped
¾ Cup Celery, diced
2 ½ Cups Hot Water
2 Cups Potatoes, cubed (or 4-5 med. Potatoes)
3 Cups Corn (Canned or Frozen)
2 Tbsp Sugar
2 tsp Salt
Pinch of Pepper
3 Tbsp Butter
3 Tbsp Flour
Quart of Half & Half
Melt 4 Tbs butter in large stock pot. Add celery and onions and sauté 5 minutes or until soft. Add water, potatoes, corn (if using canned, drain first), sugar, salt and pepper. Boil 30 minutes until tender. In a smaller pot, make basic white sauce by melting 3 tablespoons of butter. Once melted, whisk in flour. Add 2 cups half & half. Continuously stir until sauce comes to a full boil. Add white sauce and rest of half & half to vegetables. Heat through. Add parsley flakes for garnish, if desired.
Chicken Roll-Ups
1 Tbsp Butter
2 Tbsp Milk
¼ tsp Onion Powder
1 ½ tsp Parsley
Salt & Pepper to taste
1 pkg. Crescent Rolls
4 oz. Cream Cheese
1 Chicken Breast
2 Tbsp Butter
½ Cup Bread Crumbs (I use dry chicken stuffing mix)
1 Can Cream of Chicken Soup
Boil Chicken and shred. Mix butter, milk, onion powder, parsley, salt and pepper, and cream cheese. Add chicken. Drop spoonfuls in center of rolls and roll up. Dip in butter and breadcrumbs. Bake 15-20 minutes at 350º. While baking, heat soup up according to directions. I like to make it thicker and creamier, so I use milk instead of water. Place rolls on individual plates and pour soup on top. Serve.
Homemade Pizza
Dough:
1 ½ Cups Warm Water
1 Tbsp Yeast
1 Tbsp Sugar
1 tsp Salt
4 Cups Flour
Pour warm water into mixing bowl and sprinkle yeast on top, stirring to dissolve. Add sugar and salt. Then mix in flour one cup at a time. You know you have enough flour when the dough isn’t sticky to the touch. Mix on medium speed for 3 minutes to develop the gluten.
Sauce:
(I think it is easier and just as tasty to buy Pizza Sauce, but I added a recipe if you would rather.)
1 8oz. can Tomato Sauce
¼ tsp Oregano
¼ tsp Thyme
¼ tsp Garlic
¼ tsp Chili Powder
Dash of Salt & Pepper
Spread dough out and move to greased pan. Top with sauce, cheese, and desired toppings. Bake at 425° for 15-20 minutes or until crust is golden brown.
Chicken Salad Sandwiches
1 Chicken Breast, boiled and cubed
¾ Cup Celery, diced
3 Tbsp Green Onion, finely chopped
1 Cup Purple Grapes, cut
1 Cup Red Apples, diced
1 ½ Cups Mayo or Miracle Whip
½ tsp Lemon Juice
5 Large or 8-10 Small Bakery Croissants
Mix chicken, celery, onion, grapes, and apples. Add mayo and lemon juice and stir. Cut croissants in half and add spoonfuls of mixture.
*I usually serve these with Baked Potato Chips, recipe courteous of Martha Stewart (except we omit the cayenne pepper).
German Pancakes
I know, I know, breakfast for dinner? But in truth we have these a couple times a month!
5 Tbsp Butter or Margarine
6 Eggs
1 Cup Milk
1 Cup Flour
½ tsp Salt
Preheat oven to 400°. Melt butter in 9 x 13” pan. Whip eggs in mixing bowl until thick and lemon colored in a blender. Add milk, flour, and salt. Blend until smooth. Pour egg batter into pan with melted butter. Bake 15-20 minutes. Check to make sure center is semi-firm. Serve with Maple Syrup and Powdered Sugar.

Now, as for a quick update, we went to Minneapolis last weekend so Phil could attend a Preparation class for Boards! However, I don't know why, but I never pulled out my camera, so there is nothing to document the trip. Also, we are all AMAZINGLY enough, Healthy! Well, there you go!

2 Things . . .
First of all, I am cursed. It is official. Anytime I want to go do something, or there is an activity like playgroup, giving us an excuse to get out of the house, what happens? . . . Someone gets sick. Today it is my poor baby Teegan.
He missed out on the previous week's flu, but has developed a fever, cough, and a terrible runny nose.
So to all those Fargo moms, wondering why they haven't seen me for three weeks, it's because I'm cursed. We'll cross our fingers for next week, though!
And the other thing, surprise, surprise, is the Inaugeration. 
I really enjoyed watching it yesterday, much to my surprise. Now, I did not vote for Barack Obama, but while staring at the new first family, there were many instances when I was touched. And I believe that Obama, if nothing else, does have good intentions. I'm sure those are very difficult shoes to fill. I also have to say that I thought it was so cute (maybe that's not the right word) when President Bush waved a kiss goodbye to America as he stepped on to the helicopter. Well, it will be interesting to see how the next four years turn out.
Enough of the political dialog! I hope everyone is staying healthy, at least healthier than us!

So I haven't really blogged for a month now, and I appologize for that. Last week, I said I would be updating soon, that was before round two of the flu came through our house. We are all now officially healthy, however, the weather has become drastically cold (so cold that there are warnings that if you are outside longer than ten minutes, frostbite may occur). So once again, here I sit inside lounging around in my pajamas! :) At least I'm finally accomplishing something, rather than vegging on the couch waiting for the nausea to pass. This post is a big mix of the holidays and the little moments of our lives since.
The boys all stuffed in Coleman's Lightning McQueen tent (from Santa). This was right after we got back from our trip to Utah. We spent that next day just hanging out and relaxing! (Well, besides Phil, who was stuck doing homework all day.)

Coleman, Elmo, and the "nanas"
Before Christmas, Coleman started to have this funny infatuation with his "Tickle Me Elmo". He started doing things for Elmo that we would do for Teegan. Coleman would put Elmo "ni,night", hold Elmo and pat his back, and of course, feed Elmo. One Sunday morning, we were getting ready for church, and Coleman comes and tells Phil, "Elmo, nanas". Phil didn't understand, until he came down stairs and saw that Elmo, did indeed, have a banana!

Teegan just started with the Biter Biscuits. After I saw the mess they made with Coleman, I swore I would never do them again, but here I am. Teegan LOVES them. He can eat a whole biscuit in just five minutes. He is a disaster afterwards, but that makes up for the five minutes of peace, right?
He also loves his sweet potatoes! He actually has eaten pretty much everything we've given him so far. He struggled a little bit with peas at first, but now he just chows down!
CHRISTMAS
I know, I know, it is way late to be blogging this, but I use this as my journal, so you'll just have to deal with it!
Santa's Village
A couple weeks before Christmas, we went to Santa's Village with some friends. We had a lot of fun with the activities they had set up!

Doesn't Teegan make the perfect Christmas present? He learned to roll under the tree and then he would sit and swat at my ornaments. He's got a lot to learn by next year! :)
We were going to be in Utah for Christmas, and decided it would be too hard to get our present's there, so we did a pre-Christmas! It turned out to be a lot of fun, and it helped prep Coleman for the big day!

Christmas in Utah
We drove down to Minneapolis on the 23rd, and went to the Mall of America, which surprisingly, wasn't that crowded! We flew out the next day to Utah, so we could be with family for Christmas. So fun!

Our lovely Nativity picture (minus a few)! My sister, Amber, is so talented and sewed a bunch of costumes for the Nativity. Phil got to be Joseph, I was Mary, Teegan was baby Jesus, Coleman was a wiseman, as was Grammy and David. Colby was a shepherd and Tyson and Kage were angels. I love to hear the story, and it is fun to have the children act out the parts. What a perfect Christmas Eve activity!
The annual family Christmas p.j.s picture. We're missing a few this year, though. Ashley and her family weren't able to join us, and our soon-to-be Sis-in-law (Kathryn) was with her family. Hopefully in the future it will be all of us!
Sledding with Grammy and Grumpy
On New Year's Day, we got up and went sledding. We stayed up way too late, and because of our children, got up way too early, so once again, here is a fabulous picture of me. Oh well, doesn't Teegan look so cute in that big puffy snow suit? (Thanks Amber!)
When we found out we were headed to Utah (my parents bought us plane tickets-thank you, thank you!), we thought it might be fun to surprise Phil's parents. And, surprise, it was! Their reaction when we walked in on Christmas day was priceless!
While we were staying with them, they wanted to take Coleman to Chuck E. Cheese. Coleman loved it and got mad when we had to leave. Here he is hanging out with the man of the hour, Chuck E. Cheese!

We also made "Hot Air Balloons" with his family. After we had so much fun doing it in Mapleton, we taught my family how to do them. They weren't quite as successful, but we still had lots of fun!

My Apologies
I realize it has been nearly a month since I posted, and to those of you who would like an update, I'm sorry for the wait. I'm even more sorry to have to tell you that you will have to wait even longer. A few of us have been suffering from a few ailments, but we are slowly recovering, and once I get caught up with the most important things, such as clean bathrooms, I will take the time to post an incredibly long, be-lated Christmas/New Year's/Utah blog full of pictures! Until then . . .
